Wow! Time is flying and we’ve been busy as little bees getting our ducks in a row for summer! I count down the days of school in terms of how many more lunches I have to pack…5 more. I can do it.
Here’s a peek at what we’ve been up to.
We (naturally) had Tacos for Cinco de Mayo and I made this amazing No-Fry Fried Ice Cream. I followed the recipe except I used Cinnamon Toast Crunch cereal instead of the one in the recipe and then cut back a little on the cinnamon called for separately. The process was a little messy but totally worth it!
This dog. This dog is really trying my patience. He jumps all over me and scratches. I know he doesn’t mean to but it’s hard to force myself to go play with him when I know I’m going to be assaulted. The girls won’t even go near him. He turns over his water bucket as soon as you fill it up. Every. Time. I finally bought a small plastic pool and have been filling it to make sure he has water during the day. He’s only managed to turn it over once. True story.
Some of my favorite people ever threw a little birthday party. It was so good see them and catch up with them that we hated to leave…If you can score an invite to one of their parties, clear your schedule and prepare to be amazed.
I’ve made this little Coconut Crème Pie twice and it was divine! I followed the recipe except I made the meringue my normal way. I also double the recipe to make two pies at a time and ended up with enough extra filling for a lot of bowl licking. I’m thinking about making two more just looking at this picture.
And finally, I had to share this (very rare) selfie of me and my Dad. He’s smiling. That’s not exactly normal. And now, here it is, for all the world to see. Documented forever on the internet! You’re welcome, Dad!
